Day of the dad

Oliver took off for SCAD this mourning at 5:30 am! For fathers day dad picked out this fun dinner: Chef Sebastian Carosi founded the new england farm to fork project which is farm dinners he runs out of the location of his choosing (anywhere in new england, maybe beyond soon). He is full of energy, loves local food, and is an extremely good cook.


The animals were friendly and very curious. The chickens let me pet them, which is very strange. The farm is actually an orchard, Ravin Hill Orchard, in East Waterboro Maine, it's worth the drive!



Inside was very nice, the farm products are sold along with coffee, drinks, other local food, and baked goods.


Chef Carosi's famous Coca-cola bar beque sauce, which was, by far, some of the best bar beque sauce I have ever tasted.



Yeah, raw beef, tartare with "cabernet jello" and a little bit of parmesan, it had kick. There were 6-7 courses, they were all really great.


I did not take pictures of all the dishes, I think there were arteries in the soup.... it all tasted good. Below is air dried beef tenderloin with blue cheese stuffed celery on oil, sea salt, and vinegar.


Coffee rubbed beef steak, smoked ricotta (with the applewood from the orchard just outside) mixed into mashed potatoes, candied garlic, and wilted spinach.


Dessert was the best. "Panna Cotta" or cooked raw milk, super yogurt, I have no idea how to really describe it, and as a sauce, some of the sweetest strawberries grown in Maine.


Little did I know, it was really a ladybug tome.


This is a smoker, the owner claimed that one could purchase a smoker for around $60 or just make his own. I know what I want for christmas. He said it's great for smoking meats, cheese, yogurt, salt, anything.
